研究概要

2020年に開催される東京五輪およびパラリンピックまで残りわずかとなり，世界から日本への外国人観光客の増加が見込まれています。その中には，マレーシアやインドネシアなど東南アジア地域からの観光客の増加が予想され，外国人観光客にとって信頼度の高い食品の提供が必要になっています。またASEAN地域の経済発展や市場拡大も進んでいるほか，東南アジアを中心とした日本食ブーム，日本産の原材料を用いた食品の輸出と販売を狙った日本企業の進出も進んでいます。その際に課題となるのが「ハラール」です。当研究室では「ハラール食品」に着目して，観光や仕事で日本を訪れるムスリムの方々が安心して滞在できる環境を構築できるよう，インバウンド視点でのハラール食品サプライチェーンに関する研究に取り組んでいます。

日本におけるハラールへの取り組みは，まだ途上にありますが，経営工学・人間工学視点で，ムスリムの方々を含むすべての消費者にとって安心・安全な食品サプライチェーンの実現に向けた研究を行っています。現在は，以下の研究テーマに取り組んでいます。

  1. 日本におけるハラール食品，およびそのサプライチェーンの現状と課題の調査
  2. 消費者ニーズの調査にもとづく望ましいサプライチェーンの実現に向けた取り組み

Our Research

Recently, foreign tourists have been come to Japan ahead of the Tokyo Olympic Games and the Paralympic Games in 2020. It is expected that foreign tourists will increase from all over the world including South-east Asia, and we should offer safe and reliable foods to them (food integrity). Furthermore, the ASEAN (Association of South-East Asian Nations) region has recently shown economic growth and market expansion. Japanese cuisine is also popular in ASEAN region. In order to improve food integrity for Muslim people in Japan, our laboratory is focusing on “halal foods.” We are studying “halal food supply chain” from inbound perspective for all consumers in Japan, especially for the topics below.

  1. Investigating current status and issues of halal foods and halal food supply chain in Japan
  2. Discussing food integrity in their supply chain and awareness of all consumers in Japan
